Chocolate Peppermint Truffles!

Hey guys!

So since we had our employee party this past Monday we all decided that we would all bring something sweet to snack on. Since I’m not the best cook in the world I rushed to Pinterest to find something yummy to make.  Right away I saw the peppermint truffles picture and I knew that that would be what I was going to make. I was really nervous at first because I didn’t know if it was going to be hard. Boy was I wrong they were super easy to make and yummy! Here is my finished product!





Here is the full recipe on how to make them!


Ingredients:
36 Oreos (NOT Doublestuff)
1 (8 oz) pkg cream cheese, softened
1 tsp peppermint extract
16 oz. white chocolate almond bark
1/4 cup crushed candy canes or peppermint candies, for decorating
Directions:
Set a long sheet of wax paper over a cookie sheet, set aside.
Place 36 Oreos in a food processor and pulse until finely crushed (alternately if you don't own a food processor you can place Oreos in a large Ziploc bag, seal bag and crush with a rolling pin until finely crushed).
Pour crushed Oreos into a mixing bowl. In separate mixing bow blend together cream cheese and peppermint extract. Add cream cheese mixture to crushed Oreos and using a the back of a spoon, stir mixture while pressing it along the bottom of the bowl, until well combine and evenly moistened. Scoop mixture out and form into 1 inch balls (if you happen to have a kitchen scale, they should be about 16 grams each) then align on prepared cookie sheet. Place truffles in freezer for 1 hour!
Melt almond bark according to directions on package. Remove truffles from freezer and dip in melted chocolate and evenly coat then allow excess chocolate to run off (I barely made it with 16 oz. of the melted bark but you may need a little more).
Return to baking sheet, immediately sprinkle tops with crushed candy canes then allow chocolate to set.
Store in an airtight container in refrigerator.

That was the best cake ever!!


Hey pretties!

Just wanted to share with you a couple pictures of my work Christmas party! We had such a blast eating yummy foods, making beaded bracelets, chatting and opening presents!  Every time I spend time with these gorgeous gals I have a blast! Side note: Our yummy food! Peppermint cheesecake cake, Angel dream cake, Peppermint truffles and Oatmeal bars!! The peppermint cake/cheesecake in the middle was so good heaven in your mouth and the oatmeal bars where delish i could eat them both everyday!

Weekend Recap!

Hey there cuties!

Let me start by saying that this past weekend was the first weekend ever that I wanted it to go by super-fast. Since my hubby is working out of state and I won’t get to see him until this Saturday evening I just want all these days to pass by super quick. The fact that I stayed busy all weekend really helped!

Saturday- I got up early and shopped with my sister in laws! I am so happy that I can finally say that all of my Christmas shopping is finally done! I was worried that I wasn’t going to finish but I did. After a long day of shopping we all went to Noemi’s (my sister-in-law) house to finish out the evening. I watched my nieces and nephews play just dance and relaxed. But the best part of my day was getting to tango (better than Skype) the hubbers.  Yes I am aware of the fact that he looks like a homeless person but I missed him and seeing him made me weekend. His smile always brightens up my day. Noemi husband is also out of state (they work together) so we are both lost without our husbands!






Sunday- I went to church as usual. Since today is our employee party I baked all day yesterday. It was my first time making truffles and I am proud of them. They are actually relatively easy to make and so yummy.  I finished my Sunday night with my cousin watching The Ugly Truth. I love that movie!!

Someone's been MIA

Hey there pretty people!

I know that I kind of disappeared for a while. Sixteen days to be exact and I want to say that I am sorry. I have been debating whether I wanted to tell you guys the reason or not. But then I figured if you’re taking the time out of your day to read my little blog I at least owe you a little explain. First off I was moving the first weekend in December which led to the reason why I disappeared for two weeks after that.  i know many of you didn't know but I was ten weeks pregnant. During the move I managed to fall but I thought everything was ok until I started spotting later that evening. Me being a little worry bug that I am scheduled an ultra sound for the following Thursday. On Thursday my hubby and I went in thinking that everything was fine and we had a little live peanut in my belly. Come to find out that our little baby didn't have a heartbeat. It was devastating news, since I already have troubles getting pregnant in general; we were so excited with our little munchkin.  My Dr. broke us the bad news and scheduled a D&C for the following day.  Friday I went in and got it done. Since then I have been taking the time to heal not only physically but emotionally. It is devastating to lose a child. We may have not known our little baby but we already loved them very much. To top it off my husband left to work six hours away on Monday and I hate it when he’s gone.  Thankfully he has been super supportive through this whole process and took very good care of me over the weekend.
